I am originally from Albany, NY next door to Troy, NY home of Friehofers bakery and they made a product called corn toasties that were out of this world. I now live in CA and have not been able to find anything like them. Am attempting to find a location I can create a pan to make them in. They are aproximately
3.5 " round x 1/2 " thick corn muffins that fit perfectly in a toaster. Tell me how can you beat that?

This is a sweet, cake-like corn bread that is delicious with honey butter.

2 cups Bisquick baking mix
1/2 cup cornmeal
1/2 cup sugar
1 Tbsp. baking powder

In a large glass or ceramic bowl, stir all the ingredients together. Store in an airtight container.

Attach this to the Jar

California Corn Bread

1 package California Corn Bread Mix
2 eggs
1 cup milk
1/2 cup butter, melted

Preheat the oven to 350 degrees F. Place the corn bread mix in a large mixing bowl and add the eggs, milk and butter. Blend until the mixture is smooth. Poor into a greased 8-inch baking pan and bake for 30 minutes

I grew up in upstate NY with Freighofers Corn Toasties, and have since moved. Since I can't find anything close to them, I decided to make them myself. There are tons of recipes online that come pretty close.

I was born and reared in the mid-state counties of NY (Putnam/Westchester/Dutchess). I could ramble on for hours (in mind-numbing fashion) about the delicate intricacies of NY Corn Muffin Lore. The distinction between dessert and meal style Corn Muffins is far to complex and important to be expressed in mere natural language. Toast-R-Cakes frame the divided line between styles of Corn Muffins and are an entity in and of themselves.

Now in Arizona, I made a visit to NY in 2005. Before returning to AZ, I froze and air-shipped some Toast-R-Cakes and some bakery style corn muffins (with huge crowns) from A&P and shipped them ahead of me. It was a month of corn-bliss back in AZ, but the addiction was re-awakened.

If you live in NY, A&P has(had?) what I call the gold-standard in store-baked corn muffins. I don't know if they still use the same mix; it was made by pillsbury; but my research leads me to believe that it has been discontinued.

But I save the best part of the story for last. Netgrocer (owned by the Wakefern Foods/ShopRite) now ships Thomas Toast-R-Cakes anywhere within the continental US. The price isn't too bad, even with shipping. They pack them quite carefully, and they arrive in good shape - although I don't order them in the summer, because the hot FedEx trucks here in AZ ruin them.

Alas, even though you can now have your Toast-R-Cakes anywhere, I'm still convinced that the Corn lifestyle will never leave its north-east nest. Much like Chinese Food, it is as essential nature of the
region that just can't be extracted to elsewhere.

I too crave those Thomas' corn toastees! As a 25 year Arizona resident from the Boston area, I have only one solution. When friends and relatives call to say they are coming for a visit, and what should they bring, that is my standard reply, along with hot dog buns (there is no need to explain the difference, if you are from Boston, you know about those WonderBread wonders!) They can fill their suitcases with food westbound, and souvenirs eastbound!

I just got off the phone with a representative at Thomas' in Pennsylvania. He told me that the Thomas' Toast r Cakes are not sold south of Philadelphia, or even New Jersey, he wasn't sure which? Regardless, I live in Atlanta. I grew up in Brooklyn, New York and ate those tasty breakfast treats all the time. Each time a relative comes down to visit, I ask them to bring me a package or two. Most of the times, they arrive crumbled up from being packed in some type of bag and they're not even in tact enough to put into the toaster. My frustrations are great, and now even greater when the representative told me today that I was out of luck...that I even if I asked my local grocer to order the Toast R Cakes, that the grocer couldn't even get them delivered. What is wrong with this picture? With today's economy, and a demand for this product outside of the Northeast, why can't Thomas' get these to us in other regions? We get Thomas' English Muffins; why not Toast R Cakes too?

I am from upstate NY and have family who still lives there and brings me Freihofer's Corn Toasties whenever they visit me in FL. I just had some this morning. I took them for granted when I lived there and now I miss them terribly. Entemanns bought out Freihofers years ago, I don't know why they don't distribute them south of NY.

There are no corn toasties, nor thomas's corn toast-r-cakes here in Texas. There should be. Perhaps this is a business opportunity for all of us. Let's not miss it!

(everyone that happens upon this, who knows me even remotely, will know immediately that it's me. hello everyone. i hope you are well.)

i am from vermont. i moved to the dc area in 2001 after having led a blissfully ignorant childhood of eating corn toasties at my liesure. i moved to dc and assumed, if my fears of all the "bible belt" talk were true, that i was close enough to the south that things made of corn bread wouldn't be difficult to happen upon. truth be told, i didn't think of it at all, assuming it would be such a non-issue.

my first craving for corn toasties was instantaneously squelched by the local safeway, giant, foodlion, shoppers, wegmans, harris teeter, whole foods... even frickin' trader joes failed me. this is simply baffling and has become a source of contention in my life. my sisters lovingly send me picture messages of corn toasties, readily available at the grand union or a&p or hannafords.

my ex-roommate and good friend kerri found it in her great big heart to make me some homemade corn toasties for my birthday (the date of the last comment, funnily enough). i must say, that made with love, they are quite close to the real thing. square instead of round, but i don't care. slather them with butter, close your eyes and travel back. i'm about to ask her to hand over the recipe. or look it up myself. or just order some real ones on amazon.

regardless, i thought i was alone. i am both saddened and glad to find others share in my plight. godspeed indeed.
